Tucked down a quiet country lane, with birdsong in the trees and horses grazing nearby, it’s a place to slow down and savour something special.
We serve home-cooked organic food inspired by the seasons and the land around us.
Most of our ingredients come straight from our organic garden, salads, herbs and some vegetables are picked fresh on the day and brought directly to your plate.
Relax in our cosy café or soak up the countryside from our outdoor seating on bright days.

We also host intimate celebrations, family gatherings, and corporate events, along with seasonal workshops and special pop-up evenings anytime throughout the year.
Residents: Organic breakfast served 9–10am (Sundays 10–11am), Buffet Lunch served 2pm and Buffet Dinner served 6:30pm

Everything we do begins with the kitchen, the garden, and the land around us.
Our approach is simple: to live and work with awareness of the seasons, the soil, and the natural rhythms that shape our days.
We believe in using all our senses, tasting, smelling, listening, observing and allowing nature to guide who we are, what we grow and how we cook.
This connection reminds us that we are part of something larger, woven into the same web of life as the plants, animals, and landscape around us.
It’s a way of living what our ancestors understood well, and one we’re proud to continue through our food and our work here at Slieve Aughty Centre..
Rooted in Passion
The garden has been Esther’s passion for many years.
She is the heart behind our beautiful and abundant kitchen garden, which supplies our guests with fresh, seasonal food throughout the year.
Her journey began in Holland at De Kleine Aarde, a pioneering centre for sustainability, where she was involved in its early trial-and-error days in 1974.
When she moved to Kylebrack in 1980, she began creating the garden we continue to grow and harvest from today.
